The Oven

The centerpiece of St. Francis is our custom wood-burning oven. It was built
using the plans from a bread baking oven from the 19th century. Using mesquite
for its smokiness and almond for its heat, the oven creates a unique cooking
environment. Nearly every dish has a component that comes out of the oven,
whether it be the roasted meats that are the highlight of our entrees or roasted
vegetables that are pureed to make a sauce. Perhaps one of the simplest pleasures
that comes from the oven is our San Francisco style sourdough bread.
